Spaghetti Cacio e Pepe
Time: 25 minutes
Bring a large pot of salted water to a boil
Cook spaghetti in boiling water until tender but firm to the bite, about 10 minutes. Reserve some of the cooking water and drain spaghetti.
Heat oil in a large skillet over medium heat.
Add garlic and pepper to the oil. Cook and stir until fragrant, 1-2 minutes
Add spaghetti and Pecorino Romano cheese
Add ~1/2 cup o reserved pasta water; stir until cheese is melted, about 1 minute.
Add more pata water until the sauce coats the spaghetti, about 1 minute more
